Michael Charland came that same day, quickly diagnosed the problem, went out of his way (with persistence) to locate and obtain the required parts, and got the oven running properly. It turns out that the original installation over 5 years ago (from a different company) was not done correctly, not converting all valves from Natural Gas to Propane, which has been a significant safety issue unbeknownst to us!
