“We had 19 pipes burst during the big freeze last year. We patched those areas but knew we were in danger of hairline fractures opening up with changing temps etc. We shopped around for a re-pipe from copper to pex, and for someone to do it right. At the same time we wanted to replace our two 50 gallon water heaters with a single tankless system. We consistently heard from potential companies a) that we should only re-pipe the attic not the walls (because the walls were difficult, but we had had breaks on exterior walls) and b) a single tankless wouldn't work in our home that is just shy of 3500 square feet and one story (lots of long runs of pipe).
