I waited years to use any of these knives because they were so dull, pitted, chipped, and one was even developing rust. Jesse took them in, and restored them to a point I never even knew could exist in a blade. The chips and pitting are completely gone, rust too. My father showed pride in his work and took great care of his tools and equipment, and I can tell this gentleman does as well. I'm ecstatic to finally be able to cook with these knives and continue to admire them. To add, they're also sharper than they've ever been. Thank you so much, and I'm forever grateful.
